[dropcap]Today[/dropcap] is International Pasta Day, and to celebrate one of our favorite foods we’re taking a look at Oklahoma’s own “Little Italy” of Krebs.
Krebs was originally a coal-mining town during the late 19th and early 20th centuries and now houses numerous Italian restaurants such as Roseanna’s, Isle of Capri and Pete’s Place. Perhaps more famously known across the nation, however, would be Lovera’s Italian Market, which has been family-owned since 1946. The local restaurants of Krebs make their signature dishes with ingredients from this famous Italian market. Pete’s Place purchases Lovera’s Italian sausages that include a dozen different kinds ranging from mild to smoked. Matteo Lovera, a fourth-generation Lovera, said that his family’s philosophy is to “make handmade food with the most natural, healthiest and highest quality ingredients possible.”
An example of the Lovera philosophy in action is their award winning Caciocavera cheese which is made from “100 percent Jersey cow-milk” and is by far one of Lovera’s most popular products. The biggest change to Lovera’s since 1946 was the addition of two state-of-the-art cheese facilities located in Krebs and Ada. Matteo says that the Lovera cheese motto is “Respect the cheese, for it is good.”
