Rachel Suitt of NOIR in Oklahoma City says to always use fresh ingredients and simple recipes to make awe-inducing signature dishes at home. And, she says, pre-prep, pre-prep, pre-prep – and in the right order – to save time and capitalize on flavor. For example, Suitt prefers to chop her garlic first, allowing her to use less and give it time for the alkaline to release a stronger aroma and more flavor before adding it to a dish.
